Duck Schnitzel

Got a couple under the clothes line freezing again tonight.

Tonights meal was superb as usual.

We make schnitzel out of Peacock breasts. Wrap the slices in Bacon and stick a toothpick through them with an apricot and a prune on them and grill them.

Like a pheasant but on a large scale 'dynastar'. Heaps of white meat but a little dry. Great for curry's and dishes with plenty of gravy.

The Pope's Nose of those big cock birds is as big as a half pounder steak.
