The Eggs are Hardboiled and have their shells removed before going into the Smoker.
I always slightly under cook the eggs because they get another cooking in the hot smoker.
Once smoked the eggs are brown on the outside, white in the inside and have a lovely Smokey flavour.
They are delicious either hot straight out of the smoker, two of these eggs disappeared shortly after the photo was taken, or cold either by themselves or in a sandwich or salad.
I love them.
